Jay brings his passion for cooking, his creativity, and his culinary education and experience to Catering ♦ Chocolate. An honors graduate of the Culinary Institute of America in Hyde Park, NY, the Glencoe native returned to Chicago in 1999.
Jay began his culinary life in Colorado after graduating from the University of Vermont where he studied philosophy and economics. He then entered the CIA where his training included an externship at a Cal-Pacific bistro in San Francisco. Following CIA graduation, Jay spent a year in Boston cooking at the James Beard Award winning Hamersley’s Bistro.
Once back in Chicago Jay cooked at MK and North Pond before joining with Cobey Foods and Catering as Chef in 2001. Parallel to his years as Chef at Cobey, Jay established …the little chocolate shop offering his own hand-made chocolates including truffles, candies and cane caramel.
Today Catering ♦ Chocolate proudly combines the 1712 N. Wells tradition in catering and specialty foods, and the chocolate offerings of …the little chocolate shop. Besides discussing all aspects of food and entertaining, Jay enjoys art, gardening and the Cubs.
